WHAT IS HPP?
The term stands for High-Pressure Processing, or a non-thermal pasteurization process. Basically HPP preserves and sterilizes food and juice by using a cold pasteurization technique. When HPP is applied, the juice is packaged in a bottle. That juice bottle is then introduced to a vessel with a very high level of pressure transmitted by water. The high pressure inactivates certain microorganisms, bacteria and enzymes in the juice, which expands the shelf life. Non-HPP’d juice is raw and is filled with naturally occurring prebiotic and probiotic organisms…basically bacteria that is good for you!
IS HPP JUICE FRESH?
No. According to the FDA, HPP juice is NOT fresh or raw—it is preserved and sterilized. Because it is pasteurized the nutritional value, taste and ingredients are impacted greatly. If you pick up an HPP juice at a grocery store or workplace cafeteria, it has been pasteurized. A true all-green alkaline juice simply cannot remain stable for HPP, therefore citrus must be added for the HPP process.
DO HPP JUICES TASTE THE SAME AS RAW JUICE?
No. It is our opinion, truly raw and unprocessed juices taste better and are the purest source of nutrition. An HPP juice is sterilized to extend the shelf life up to 45 days, depending on the juice. Raw juices have a shelf life of 5 days or less.

IS HPP BAD?
While there are worse pasteurization processes, HPP inactivates certain microorganisms, bacteria and enzymes in the juice. The good bacteria are taken away so the shelf life can be extended. Whole sellers and super markets are required to use HPP. The health benefits of HPP are still better than adding chemicals or unnatural preservatives, however because the nutrients, vitamins and antioxidants are damaged or reduced significantly, fresh juice is best.
A NOTE FROM ZEST:
We feel consumers should be aware there are some companies that use the HPP process on their cold pressed juice but go completely out of their way to be nontransparent of the process. Some companies will even use the words: “fresh,” “raw” and “non-pasteurized”. The truth is simple, raw juice is not supposed to be sitting on the shelf for longer than 5 days.
